A 500 year old breed and the pinnacle of French Cuisine, our birds are direct descendants of French imports.  These birds have a flavor and texture that is very different from Cornish Cross, and require a different culinary approach. They are best prepared using traditional French recipes such as Coq Au Vin and Fricassee.

These are 16 week old birds who were not selected as breeding stock in our first pass. Birds were fed a balanced grain and were finished with grains soaked in local raw milk. The average size is 5 pounds. These Birds were processed ON FARM, and are only legal for sale in NY State.
