A 500 year old breed and the pinnacle of French Cuisine, our birds are direct descendants of French imports.  These birds have a flavor and texture that is very different from Cornish Cross, and require a different culinary approach. They are best prepared using traditional French recipes such as Coq Au Vin and Fricassee.

These are 20 week old birds who were not selected as breeding stock in our first pass. Birds were fed a balanced grain, average size is 3.5 pounds. Birds will be harvested 12/20/23 at a NYS inspected facility, and are only legal for sale in NY State.

You are placing a $10 DEPOSIT on your FRESH pastured bird. Birds are $8/pound, therefore the total price will be determined at point of sale. Please do not expect the total price to be $10.
