Bone-in thigh smoked with hickory wood. Pekin are large sumptuous birds. These are a classic meat breed. Our ducks are allowed to mature while running around all day playing duck games. As a result, they are they are much larger and more flavorful than commercial birds. Bone-in leg/thigh quarters are first prepared with a classic bacon cure, and then smoked over hickory wood chips. Each vacuum sealed package contains a single duck breast, priced according to size.
