Victoria, please let us know how you enjoy the bird. We like to prepare our geese as follows. We prick it liberally, season with olive oil, salt and pepper and place in a pre-heated oven at 450 degrees for the first 15 minutes. The temperature is reduced to 350 degrees and the bird is turned 90 degrees every 20 minutes until done. This provides uniform self basting. We always prepare our birds “rare” and let stand before carving. When we carve, we use a small sharp knife to remove just the the wishbone as a first step.. That allows the breast to be removed in one piece from the bird to a serving plate, where it can be sliced. We find this gives a fuller breast and improves the serving sizes and presentation.
